Maybe not the one that will completely break you? Why not teleportation? He could be a human taxi instead! Much less likely to cause a psychological break. :D

Indeed! But there are three things to consider:

1) They already have a top tier human taxi, i.e. Wei Yun.

2) Legal Dokkabis can fill this role to some degree (if they can get them to join their side). They usually can't take passengers, but they do just fine for message or package deliveries.

3) Probably the biggest hurdle: Ethan stands out. He can't blend into the locals the way Wei Yun can. If he's seen around too much, he'll probably get marked as an illegal Dokkabi pretty quickly.

We will see, though. Despite all those points, he would still be more useful as a teleporter than as a non-Dokkabi.

Would a legal Dokkabi ever join their side - and if, could they trust him/her?

Also, Ethan already teleported himself, Danbi and Lushaka before he got the poison, he should have an idea how that is. He has no idea how it feels to convert a dragon's body into a living tree.

Being able to transport persons is probably rare and very useful in any case. Also, thinking about it, even if he gets recognized, he could vanish in a bling and there not many who could follow him, if any.
...
It would be the "safer" decision.

Even if a teleporter is second to none at escaping, once your likeness is widely known as that of an outlaw, one can still face consequences. e.g. People might refuse to do business with him (and report to the authorities ASAP). And who knows what could happen if they decide to send a teleporter against him? That would be a pain, and a potential risk to the entire settlement if the chasing teleporter manages to follow him there.

In any case, right now, the point remains that working as an Arborist is not feasible for poor Ethan. :'D
